· Davidstow Dairy is celebrating its 60th anniversary this year having matured its first cheddar in the years following the end of the Second World War.
· The dairy uses milk from many of the best farms in Cornwall and the surrounding area, all prized for their rich, creaminess and famed for being the country’s finest quality milk.
· Davidstow is no ordinary cheddar. Like a master winemaker, it has taken 60 years of dedication, learning and love to perfect the art of cheese making, the Davidstow way.
· Now, with six decades of know-how, Davidstow has created two special Cornish cheeses, Davidstow Cornish Classic and Davidstow Cornish Crackler. Davidstow Cornish Classic is typically matured for 14 months and has a perfectly balanced rich, long-lasting, full and ‘nutty’ flavour with a creamy texture and pale glow. Davidstow Cornish Crackler is typically matured for at least20 months. The result is more intense, yet pleasantly sweet, with added layers of complexity and concentrated bursts of flavour enhanced by the naturally occurring crunchy crystals the cheese acquires with age.
· The meticulous cheese making process begins with combining the right cultures in the recipe; a closely guarded secret mastered over the decades, used only by Davidstow. The combination is unique and the result of constant refinement and improvement.
· Grading and selection is Davidstow’s art of nurturing nature. As the cheese matures the Davidstow cheese grader will spend many hours refining the collection: tasting, checking balance, firmness, body and texture and removing any cheese that does not meet these exacting standards.
· Davidstow’s quality is owed to rich Cornish milk coupled with real expertise. Mark Pitts-Tucker, the Davidstow Head Cheese Grader is an acknowledged cheese expert with well over half a lifetime of experience crafting, maturing and perfecting cheese.
· Davidstow won Supreme Champion at the Nantwich International Cheese Show for two consecutive years with numerous other accolades over the years.

· The dairy is proud to work closely with Cornwall’s dairy farming community sourcing milk from 420 local farms every day helping to put millions into the rural economy. The long-standing relationship with the farmers is incredibly important and often stretches back across the generations. The dairy takes over 50% of all milk produced in the County.
· 111 people currently work at Davidstow – all passionate and immensely proud of its cheeses and the contribution that the dairy makes to the Cornish community. And that doesn’t take into account the numerous farms Davidstow works with every day in Cornwall.
